Another variation on kale salad with beets and grilled chicken. This one has a citrus vinaigrette and red grapes for sweetness. Yum!
Nothing like a cold kale chopped salad on a hot day. Actually there are plenty of things like that…. any type of salad really. Regardless, this was a particularly satisfying lunch.
